Peach Yogurt Cake

Ingredients

  • 3 eggs
  • 200 ml plain yogurt
  • 120 ml vegetable oil
  • 170 g sugar (you can use less if you prefer)
  • 2 teaspoons vanilla sugar
  • 250 g all-purpose flour
  • 2 teaspoons baking powder
  • 100 g peaches (fresh or canned, just make sure to drain well)

Instructions

Mix the batter briefly and at low speed, except when beating the eggs with sugar.

Make sure all ingredients are at room temperature. Beat eggs with sugar until fluffy. Pour in oil and mix briefly, then add yogurt. Mix flour with baking powder and sift into the batter. Mix everything briefly on low speed. Pour into a loaf pan lined with parchment paper. Arrange diced peaches on top (if using canned peaches, drain them well with a paper towel). Bake in a preheated oven at 180°C (350°F) for 40-45 minutes (check with a toothpick – every oven varies).
