Twix Caramel Bliss Cheesecake

Ingredients

  • For the Crust:
  • 250 g buttery cookies
  • 1/2 cup (100 g) butter
  • For the Cheesecake Filling:
  • 800 g ground cottage cheese (I used a thick one)
  • 5 eggs
  • 2/3 cup (150 ml) heavy cream (30% fat)
  • 300 g caramel fudge
  • 1/4 cup (60 g) granulated sugar
  • 1 tablespoon vanilla sugar
  • 1/3 cup (40 g) all-purpose flour
  • 2 Twix bars
  • For the Topping:
  • 5.3 ounces (150 g) milk chocolate
  • 1/4 cup (60 ml) heavy cream (30% fat)
  • 1 Twix bar for decoration
  • 1/4 cup (50 g) caramel fudge

Instructions

For the Crust:
Crush the cookies into crumbs, mix with melted butter, and press into the bottom of the springform pan. Chill in the fridge.

For the Cheesecake Filling:
Preheat your oven to 320°F (160°C) top and bottom heat.
Mix all the ingredients for the cheesecake filling until well combined. Pour half of the mixture onto the cookie crust. Arrange chopped Twix bars on top, then pour the rest of the mixture.
Place a dish with boiling water on the bottom rack of the oven and put the cheesecake on the middle rack. Bake for 1 hour and 15 minutes. Turn off the oven and leave the cheesecake to cool with the door slightly open. Once cooled, refrigerate for at least 8 hours or overnight.

For the Topping:
Heat the cream, add the chocolate, and stir until melted. Pour over the cheesecake. Decorate with Twix bars and caramel fudge.
