Berry Cheese Swirl Rolls
Ingredients
- For the Dough:
- 3 1/4 cups (400 g) all-purpose flour
- 0.9 ounce (25 g) fresh yeast or 2 1/4 teaspoons dry yeast
- 3/4 cup (200 ml) milk
- 1 egg
- 3 tablespoons (40 g) butter
- 3 tablespoons (40 g) sugar
- Pinch of salt
- For the Filling:
- 1 1/4 cups (200 g) ground cottage cheese
- 1 egg yolk
- 2 tablespoons sugar and 1 teaspoon vanilla sugar
- 1 1/4 cups (150 g) blueberries or blackberries (tossed with 1/2 teaspoon cornstarch)
- Additionally:
- 1 egg for brushing
Instructions
Sift the flour into a bowl.
For the Starter:
Gently heat the milk, crumble in the yeast, add sugar, and 2 tablespoons of flour (from the sifted flour). Mix and let it rise in a warm place for 15-20 minutes.
To the bowl with flour, add the starter, melted and cooled butter, egg, and salt. Knead by hand or with a mixer until the dough is smooth (if it's too sticky, you can sprinkle a bit of flour). Cover the dough with a cloth and let it rise for 1 hour.
Mix all the filling ingredients except for the berries.
After rising, roll out the dough into a rectangle. Spread the cheese mixture and sprinkle with berries coated in cornstarch. Roll it up from the longer side, then cut into 12 pieces. Place on a baking sheet lined with parchment paper, cover with a cloth, and let rise for 20 minutes. Preheat the oven to 350°F (180°C). Brush the risen rolls with beaten egg. Bake for about 30 minutes.
Once baked, drizzle with icing or dust with powdered sugar for a delicious finish. Enjoy your homemade sweet rolls! 🍞🍇
