Strawberry Cream Cups
Ingredients
- For the Strawberry Jam:
- 1 cup of frozen strawberries (100g)
- 1/4 cup of white sugar (60g)
- 1 tablespoon of lemon juice (15g)
- 1 tablespoon of cornstarch (10g)
- For the Chantilly Cream:
- 1 cup of heavy cream (> 35% fat content)
- 1/4 cup of powdered sugar
- 1 teaspoon of vanilla extract
- For Assembly:
- Yellow cake mix
Instructions
- Let's start by making the strawberry jam. In a saucepan, combine the frozen strawberries, white sugar, lemon juice, and cornstarch. Cook over medium heat, stirring frequently, until the strawberries break down and the mixture thickens, about 5-7 minutes. Remove from heat and set aside to cool.
- While the jam cools, prepare the chantilly cream. In a mixing bowl, whip the heavy cream until soft peaks form. Add the powdered sugar and vanilla extract, then continue whipping until stiff peaks form. Set aside.
- Prepare the yellow cake mix according to package instructions. Once baked and cooled, crumble the cake into small pieces.
- Now it's time to assemble the cups. Start by spooning a layer of strawberry jam into the bottom of each serving glass.
- Next, add a layer of chantilly cream on top of the strawberry jam.
- Sprinkle a generous amount of crumbled yellow cake over the cream layer.
- Repeat the layers until the glasses are filled, ending with a dollop of chantilly cream on top.
- Garnish with fresh strawberries or any other toppings you like.
- Chill the strawberry cream cups in the refrigerator for at least 1 hour before serving.
