Soft Cinnamon Rolls


  • DOUGH:
  • ▫️ 2 3/4 cups all-purpose flour
  • ▫️ 0.7 oz fresh yeast
  • ▫️ 3 tbsp sugar
  • ▫️ 2/3 cup milk
  • ▫️ 3 1/2 tbsp butter
  • ▫️ 1 egg
  • ▫️ pinch of salt
  • ▫️ 3 1/2 tbsp butter
  • ▫️ 3 tbsp sugar
  • ▫️ 2-3 tsp cinnamon
  • 1 egg for brushing
  • GLAZE:
  • ▫️ 2 1/4 oz cream cheese (room temperature)
  • ▫️ 2 tbsp softened butter
  • ▫️ 2 tbsp powdered sugar
  • ▫️ 1 tsp vanilla sugar


Sift the flour into a bowl.

Prepare the yeast mixture: slightly heat the milk, crumble the yeast, add sugar, and 2 tbsp of sifted flour. Cover with a cloth and let it rest in a warm place for 15 minutes.

Melt the butter and let it cool until lukewarm but still liquid.

Add the risen yeast mixture, melted butter, salt, and egg to the flour. Knead until the dough is smooth and elastic. Cover with a cloth and let it rise in a warm place for about 1 hour.

After rising, roll out the dough into a rectangle about 1 cm thick. Mix sugar with cinnamon, add very soft butter, and mix. Spread the mixture over the dough, then roll it up into a log. Cut into 4 pieces and place them in a loaf pan. Let it rest for 15 minutes, covered with a cloth. After this time, brush with beaten egg. Bake for about 25 minutes at 350°F.

Glaze: Cream the butter with powdered sugar and vanilla sugar. Add cream cheese, mix, and spread over the cooled buns.
