Lotus Bliss Cheesecake

Ingredients

  • Ingredients:
  • 250 g Lotus biscuits
  • 80 g butter
  • Cheesecake Filling:
  • 1 kg high-quality cream cheese
  • 210 g granulated sugar
  • 20 g vanilla sugar
  • 6 medium eggs
  • 80 g all-purpose flour
  • 270 ml heavy cream (30% fat)
  • Additional:
  • 200 g Lotus spread (if unavailable, can be replaced with caramel spread)

Instructions

  1. Crush the Lotus biscuits into crumbs, then mix them with melted and cooled butter. Press the mixture into the bottom of a 24.5 cm springform pan. Chill in the refrigerator while preparing the filling.
  2. For the cheesecake filling, cream together the cream cheese and sugars until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the flour, then gradually add the heavy cream while mixing until combined.
  3. Pour the filling over the chilled crust and smooth the top.
  4. Preheat the oven to 170°C (340°F) conventional heat. Bake the cheesecake for 15 minutes, then reduce the temperature to 110°C (230°F) and bake for an additional 1.5 hours.
  5. After baking, leave the cheesecake in the oven with the door slightly ajar for 1.5 hours, then remove and let it cool completely.
  6. Once cooled, spread the slightly warmed Lotus spread over the top of the cheesecake.
  7. Refrigerate the cheesecake overnight before serving. Enjoy!
