Ingredients

  • Ingredients for the crust: 9x13-inch pan
  • 250 g all-purpose flour
  • 1 teaspoon baking powder
  • 1/3 cup powdered sugar
  • 2 egg yolks
  • 80 g butter
  • Ingredients for the cheesecake filling:
  • 1 kg cottage cheese
  • 4 egg yolks
  • 1/3 cup granulated sugar
  • 1.5 packets of vanilla or cream pudding mix
  • 1.5 cups milk
  • 1/2 cup oil
  • Ingredients for the meringue:
  • 6 egg whites
  • 2/3 cup granulated sugar
  • a pinch of salt

Instructions

For the crust: Mix all crust ingredients until you get a uniform consistency. Wrap the dough and refrigerate for 15-20 minutes. Afterward, roll it out into a rectangle and place it on the bottom of the pan. Bake for 15 minutes at 180 degrees Celsius.

Mix all ingredients for the cheesecake filling until just combined. Pour the prepared filling over the pre-baked crust and bake at 170 degrees Celsius for about 1 hour.

Using a mixer, beat the egg whites, gradually adding sugar until stiff peaks form (it's crucial for the meringue to be well beaten!!). Carefully remove the baked cheesecake from the oven and spread the beaten meringue on top, smoothing it out. Bake the cheesecake for an additional 15 minutes at 160 degrees Celsius (only 15 minutes to create the "rosa" effect). After 15 minutes, remove it from the oven. After a few minutes, beautiful droplets will start to form.
