  • 100g biscuits
  • 1 packet raspberry jelly
  • 400ml hot water
  • 150g frozen or fresh raspberries
  • 200ml 30% cream
  • 100g mascarpone cheese
  • 2-3 tablespoons powdered sugar
  • A few meringues
  • Almond flakes for garnish


  1. issolve the raspberry jelly in hot water and let it cool.
  2. Stir in the raspberries and mix well.
  3. Spoon the slightly set jelly over the biscuits in serving cups.
  4. Chill the cups until the jelly is firm.
  5. In a bowl, whip the cream with mascarpone and powdered sugar until fluffy.
  6. Spread the creamy mixture over the set jelly layer.
  7. Chill the dessert cups for another 2-3 hours.
  8. Just before serving, crumble meringues on top and sprinkle with almond flakes.
