Raspberry Cloud Dessert Cups
Ingredients
- 100g biscuits
- 1 packet raspberry jelly
- 400ml hot water
- 150g frozen or fresh raspberries
- 200ml 30% cream
- 100g mascarpone cheese
- 2-3 tablespoons powdered sugar
- A few meringues
- Almond flakes for garnish
Instructions
- issolve the raspberry jelly in hot water and let it cool.
- Stir in the raspberries and mix well.
- Spoon the slightly set jelly over the biscuits in serving cups.
- Chill the cups until the jelly is firm.
- In a bowl, whip the cream with mascarpone and powdered sugar until fluffy.
- Spread the creamy mixture over the set jelly layer.
- Chill the dessert cups for another 2-3 hours.
- Just before serving, crumble meringues on top and sprinkle with almond flakes.
