Quick Confetti Cake


  • 5 eggs
  • 250g sugar
  • 250ml milk
  • 250ml oil
  • 450g flour
  • 1 packet baking powder
  • 1 packet vanilla sugar
  • Zest of one organic lemon
  • 100g sugar sprinkles
  • For the Sugar Glaze:
  • 2 egg whites
  • 300g powdered sugar
  • 2 tablespoons lemon juice


  1. Preheat the oven to 180°C (350°F) and prepare a baking pan.
  2. In a mixing bowl, beat together 5 eggs and 250g of sugar until fluffy.
  3. Add 250ml of milk, 250ml of oil, and the zest of one organic lemon to the egg-sugar mixture. Mix well.
  4. Sift in 450g of flour and 1 packet of baking powder. Also, add 1 packet of vanilla sugar. Combine everything until you have a smooth batter.
  5. Gently fold in 100g of sugar sprinkles into the batter.
  6. Pour the batter into the prepared baking pan.
  7. Bake in the preheated oven for about 35-40 minutes or until a toothpick inserted into the center comes out clean.

For the Sugar Glaze:

  1. In a separate bowl, whisk 2 egg whites until frothy.
  2. Gradually add 300g of powdered sugar and continue to whisk until the mixture is smooth.
  3. Stir in 2 tablespoons of lemon juice.

Once the cake is baked and has cooled, spread the sugar glaze on top. Sprinkle additional sugar sprinkles for a festive touch. Enjoy your delicious Quick Confetti Cake!
