Plum Yogurt Cake

Ingredients

  • 1 cup (200 g) yogurt
  • 1 1/2 cups (200 g) light spelt flour
  • 1/4 cup (60 g) erythritol
  • 4 tablespoons oil
  • 3 eggs
  • 2 teaspoons baking powder
  • Plums

Instructions

  1. Mix the dry ingredients together, and in a separate bowl, whisk the wet ingredients.
  2. Combine the dry ingredients with the wet ones and mix until just combined.
  3. Pour the batter into the pan and arrange plum halves on top.
  4. Preheat the oven to 180°C (350°F) and bake for about 50 minutes, or until a toothpick inserted into the center comes out clean. Enjoy!
