Passion Fruit Delight Cake
Ingredients
- Mix:
- 3/4 cup sugar (180g)
- 3 cups all-purpose flour (360g)
- 1 teaspoon baking powder (5g)
- 1/2 teaspoon baking soda (3g)
- 1/2 teaspoon salt (2g)
- 2/3 cup plain yogurt (165g)
- 2 large eggs (112g)
- 2/3 cup olive oil (135g)
- 1 tablespoon vanilla extract (14g)
- 1/2 cup passion fruit pulp (135g)
- Glaze:
- 1 cup powdered sugar (95g)
- 1 teaspoon vanilla extract (10g)
- 2 tablespoons passion fruit pulp (30g) (optional seeds)
Instructions
- Preheat the oven to 350°F (180°C). Prepare a rectangular baking pan by greasing it and lining it with parchment paper extending over the sides.
- In a bowl, mix together flour, sugar, baking powder, baking soda, and salt. Set aside.
- In another bowl, combine yogurt, eggs, olive oil, vanilla, and passion fruit pulp. Add the dry ingredients in two parts and mix until well combined.
- Pour the batter into the prepared pan and bake for 60-70 minutes at 180°C. After 50 minutes, check if it's done by inserting a toothpick into the center. If it comes out clean, it's ready. If not, bake for another 10 minutes and test again.
- For the glaze, simply mix powdered sugar, vanilla, and passion fruit pulp until you get a thick, spreadable texture.
- Remove the sweet treat from the oven and let it cool to room temperature before spreading the glaze over the top.
