Passion Fruit Delight Cake

Ingredients

  • Mix:
  • 3/4 cup sugar (180g)
  • 3 cups all-purpose flour (360g)
  • 1 teaspoon baking powder (5g)
  • 1/2 teaspoon baking soda (3g)
  • 1/2 teaspoon salt (2g)
  • 2/3 cup plain yogurt (165g)
  • 2 large eggs (112g)
  • 2/3 cup olive oil (135g)
  • 1 tablespoon vanilla extract (14g)
  • 1/2 cup passion fruit pulp (135g)
  • Glaze:
  • 1 cup powdered sugar (95g)
  • 1 teaspoon vanilla extract (10g)
  • 2 tablespoons passion fruit pulp (30g) (optional seeds)

Instructions

  1. Preheat the oven to 350°F (180°C). Prepare a rectangular baking pan by greasing it and lining it with parchment paper extending over the sides.
  2. In a bowl, mix together flour, sugar, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, combine yogurt, eggs, olive oil, vanilla, and passion fruit pulp. Add the dry ingredients in two parts and mix until well combined.
  4. Pour the batter into the prepared pan and bake for 60-70 minutes at 180°C. After 50 minutes, check if it's done by inserting a toothpick into the center. If it comes out clean, it's ready. If not, bake for another 10 minutes and test again.
  5. For the glaze, simply mix powdered sugar, vanilla, and passion fruit pulp until you get a thick, spreadable texture.
  6. Remove the sweet treat from the oven and let it cool to room temperature before spreading the glaze over the top.
