Oat Cups with Yogurt and Jam
Ingredients
- Crust:
- 1 cup of rolled oats (105g.)
- 2 teaspoons of vanilla extract (10g.)
- 2 teaspoons of honey (14g.)
- 3 tablespoons of coconut oil (45g.)
- Filling:
- Greek yogurt
- Fruit jam
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, combine the rolled oats, vanilla extract, honey, and coconut oil. Mix well until everything is evenly combined.
- Divide the oat mixture evenly among the muffin tin cups, pressing the mixture firmly into the bottom and up the sides to form a crust.
- Bake the oat crusts in the preheated oven for about 10-12 minutes, or until lightly golden and firm.
- Remove the oat crusts from the oven and let them cool completely in the muffin tin.
- Once cooled, carefully remove the oat cups from the muffin tin and fill each cup with Greek yogurt.
- Top each yogurt-filled cup with a dollop of fruit jam of your choice.
