Moist Red Velvet Cake

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup boiling water
  • 1/4 cup cocoa powder
  • 2 cups granulated sugar
  • 8 tablespoons unsalted butter, melted
  • 1/2 cup vegetable oil
  • 3 large eggs, at room temperature
  • 1 cup buttermilk, at room temperature
  • 1 teaspoon vanilla extract
  • 4 teaspoons red food coloring
  • 1 teaspoon distilled white vinegar
  • Cream Cheese Frosting

Instructions

  1. First things first, preheat your oven to 325 degrees F. Grease and line two 9x9 inch baking dishes with parchment paper.
  2. In a medium bowl, mix together all the dry ingredients and set them aside.
  3. Next, boil some water and then remove it from the heat. Stir in the cocoa powder until it's well combined. Set this mixture aside.
  4. In another mixing bowl, combine the sugar, melted butter, vegetable oil, and eggs. Give it a good stir until everything's nicely combined. Then, add in the buttermilk, vanilla extract, and red food coloring, and mix it all together. Finally, stir in the white vinegar and the cocoa water mixture.
  5. Gradually add the dry ingredients into the wet mixture, about 1/2 cup at a time, and whisk until everything's well combined.
  6. Divide the batter evenly between the prepared baking dishes and pop them into the oven. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool for about 10 minutes before transferring them onto a cooling rack to cool completely.
  7. Now, let's talk frosting! You can either make your own cream cheese frosting or grab some from the store. If you're making it yourself, beat together 1 block of softened cream cheese, 2 sticks of softened butter, 4 cups of powdered sugar, 1 teaspoon of vanilla extract, and 2 tablespoons of heavy cream until it's nice and smooth.
  8. Once the cakes are cooled, frost the first layer, then place the second layer on top and frost the top. You can also crumble up some of the cake scraps and sprinkle them on top for extra flair. And there you have it – your Super Moist Red Velvet Cake is ready to be enjoyed!
