Ingredients

  • Cookie:
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 tablespoons unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup peanut butter
  • 1 egg, at room temperature
  • 2 tablespoons milk
  • 2 teaspoons vanilla extract
  • 36 mini peanut butter cups, unwrapped
  • Ganache Drizzle:
  • 4 ounces semi-sweet chocolate bar, chopped
  • 1/4 cup milk, heated
  • Topping:
  • 1/3 cup peanut butter chips, crushed

Instructions

  1. Preheat your oven to 375°F and grease a 24-cup mini muffin pan (you'll be making 36 cookie cups).
  2. Unwrap the peanut butter cups and set them aside in a bowl.
  3. In a medium bowl, whisk together the flour, baking soda, and salt. Set this mixture aside.
  4. In another medium bowl, beat together the butter, granulated sugar, brown sugar, and peanut butter until smooth.
  5. Add the egg, milk, and vanilla extract to the peanut butter mixture, and beat until smooth.
  6. Gradually add the flour mixture to the peanut butter mixture, mixing until fully combined.
  7. Using an extra-small cookie scoop, shape the dough into 36 balls and roll them until they're round. Place the cookie balls into the muffin pan and chill in the freezer for 10 minutes.
  8. Bake the cookies in the preheated oven for 8 minutes.
  9. As soon as you remove the cookies from the oven, press a peanut butter cup into the center of each cookie.
  10. Allow the cookies to cool while you prepare the ganache and crush the peanut butter chips.
  11. Pour the heated milk over the chopped chocolate and stir until smooth. Transfer the ganache to a piping bag.
  12. Optional: Crush the peanut butter chips in a blender.
  13. Once the cookies have cooled, remove them from the pan and place them on a cooling rack.
