Easy and Delicious Cannoli Cake

the perfect treat that's ready in just 30 minutes, making it ideal for any last-minute Valentine’s Day celebration! This cake is incredibly moist, and the addition of chocolate chips inside adds a delightful touch.

Ingredients

  • Cake:
  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 3/4 cups granulated sugar
  • 12 tablespoons unsalted butter, at room temperature
  • 3 eggs, at room temperature
  • 2 1/2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 1 cup mini chocolate chips
  • Cannoli Filling:
  • 32 oz. Whole Milk Ricotta, strained and dried
  • 3/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 2 cannoli shells
  • Extra mini chocolate chips for topping

Instructions

  1. Preheat your oven to 350°F. Line two 9-inch square cake pans with parchment paper and grease the sides.
  2. In a large bowl, combine the dry cake ingredients, excluding the sugar. Set this mixture aside.
  3. In a separate medium bowl, use an electric mixer to beat the butter until creamy. Add in the granulated sugar and beat for about 5 minutes. Then, add the eggs and vanilla extract, and beat until well combined.
  4. Alternately add the milk and flour mixture into the butter mixture, a little at a time, until everything is well combined and smooth. Fold in the mini chocolate chips.
  5. Divide the cake batter evenly between the prepared pans, smoothing the tops with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 5 minutes before transferring them to a cooling rack.
  6. While the cakes continue to cool, prepare the cannoli filling. Start by patting down the strained ricotta with a paper towel to remove any excess moisture. Then, fold in the powdered sugar and vanilla extract until smooth. Next, gently fold in the mini chocolate chips until they are evenly distributed.
  7. Pipe the cannoli filling onto two cannoli shells and set them aside.
  8. Once the cakes have cooled completely, carefully trim the sides and frost one layer of the cake with the prepared cannoli filling. Place the second layer of cake directly on top and frost the top layer as well. Sprinkle with additional mini chocolate chips and decorate with the prepared cannolis.
