Get ready for a treat with this Lemon Blueberry Crumb Cake - it's a burst of flavors that'll make your taste buds dance! This breakfast crumb is one of my go-tos, and it's perfect for welcoming in the spring vibes. Here's how to whip it up:

Ingredients

  • Crumb:
  • 3/4 cup brown sugar
  • 1/2 cup all-purpose flour
  • 6 tablespoons unsalted butter, melted
  • Cake:
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 8 tablespoons unsalted butter, softened
  • 1 cup granulated sugar
  • Zest of 1 lemon
  • 2 eggs, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 2/3 cup milk
  • 2 cups blueberries
  • Lemon Icing:
  • 1 cup powdered sugar
  • Juice of 1/2 fresh lemon
  • 1 tablespoon heavy cream

Instructions

  1. Preheat your oven to 350°F and grease an 8x8 square baking dish or a 9” round springform pan.
  2. Let's start with the crumb! Mix together the brown sugar, flour, and melted butter until you have a crumbly mixture. Set this aside for later.
  3. In a small bowl, combine the flour, baking powder, and salt. Set this bowl aside too.
  4. In a larger bowl, beat together the softened butter and granulated sugar until fluffy, which should take about 2 minutes.
  5. Mix in the lemon zest, eggs, and milk until everything is well combined.
  6. Gradually add the flour mixture to the wet ingredients, mixing until you have a thick batter. Fold in the blueberries gently.
  7. Spread half of the batter into your prepared baking dish, smoothing it out. Sprinkle a layer of the crumb mixture over the batter, then add the remaining batter on top. Finish off with another sprinkle of the crumb mixture.
  8. Pop your creation into the oven and bake for around 50-55 minutes if you're using an 8x8 baking dish. For the 9” round dish, start checking around 45 minutes. Once baked, remove it from the oven and let it cool.
  9. While the cake cools, whip up the icing by mixing together the powdered sugar, lemon juice, and heavy cream until smooth. Drizzle this goodness over the cooled cake.
  10. Slice it up and dive into lemony-blueberry bliss! Enjoy every crumb!
