Lemon Blueberry Crumb Cake

Ingredients
- Crumb:
- 3/4 cup brown sugar
- 1/2 cup all-purpose flour
- 6 tablespoons unsalted butter, melted
- Cake:
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 8 tablespoons unsalted butter, softened
- 1 cup granulated sugar
- Zest of 1 lemon
- 2 eggs, at room temperature
- 1 1/2 teaspoons vanilla extract
- 2/3 cup milk
- 2 cups blueberries
- Lemon Icing:
- 1 cup powdered sugar
- Juice of 1/2 fresh lemon
- 1 tablespoon heavy cream
Instructions
- Preheat your oven to 350°F and grease an 8x8 square baking dish or a 9” round springform pan.
- Let's start with the crumb! Mix together the brown sugar, flour, and melted butter until you have a crumbly mixture. Set this aside for later.
- In a small bowl, combine the flour, baking powder, and salt. Set this bowl aside too.
- In a larger bowl, beat together the softened butter and granulated sugar until fluffy, which should take about 2 minutes.
- Mix in the lemon zest, eggs, and milk until everything is well combined.
- Gradually add the flour mixture to the wet ingredients, mixing until you have a thick batter. Fold in the blueberries gently.
- Spread half of the batter into your prepared baking dish, smoothing it out. Sprinkle a layer of the crumb mixture over the batter, then add the remaining batter on top. Finish off with another sprinkle of the crumb mixture.
- Pop your creation into the oven and bake for around 50-55 minutes if you're using an 8x8 baking dish. For the 9” round dish, start checking around 45 minutes. Once baked, remove it from the oven and let it cool.
- While the cake cools, whip up the icing by mixing together the powdered sugar, lemon juice, and heavy cream until smooth. Drizzle this goodness over the cooled cake.
