Lemon pie-flavored oatmeal
Ingredients
- 1/2 cup rolled oats (52g)
- 1 tablespoon chia or flax seeds (10g)
- 1 tablespoon of your favorite sweetener, such as monk fruit or Lakanto (15g)
- 1/2 teaspoon lemon zest
- 1/3 cup plain yogurt (82g)
- 2/3 cup your preferred milk (163g)
- 1 tablespoon lemon juice (15ml)
- 1 teaspoon vanilla extract (5g)
- Crushed cookies for serving
Instructions
- In a saucepan, combine the rolled oats, chia or flax seeds, sweetener, and lemon zest.
- Add the plain yogurt, milk, lemon juice, and vanilla extract to the saucepan.
- Stir well to combine all the ingredients.
- Place the saucepan over medium heat and bring the mixture to a gentle simmer.
- Cook for about 5-7 minutes, stirring occasionally, until the oats are tender and the mixture thickens to your desired consistency.
- Once cooked, remove the saucepan from the heat and let the oatmeal cool slightly.
- Serve the lemon pie oatmeal in bowls and sprinkle with crushed cookies for an extra touch of flavor and texture.
