Ingredients

  • 1/2 cup rolled oats (52g)
  • 1 tablespoon chia or flax seeds (10g)
  • 1 tablespoon of your favorite sweetener, such as monk fruit or Lakanto (15g)
  • 1/2 teaspoon lemon zest
  • 1/3 cup plain yogurt (82g)
  • 2/3 cup your preferred milk (163g)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon vanilla extract (5g)
  • Crushed cookies for serving

Instructions

  1. In a saucepan, combine the rolled oats, chia or flax seeds, sweetener, and lemon zest.
  2. Add the plain yogurt, milk, lemon juice, and vanilla extract to the saucepan.
  3. Stir well to combine all the ingredients.
  4. Place the saucepan over medium heat and bring the mixture to a gentle simmer.
  5. Cook for about 5-7 minutes, stirring occasionally, until the oats are tender and the mixture thickens to your desired consistency.
  6. Once cooked, remove the saucepan from the heat and let the oatmeal cool slightly.
  7. Serve the lemon pie oatmeal in bowls and sprinkle with crushed cookies for an extra touch of flavor and texture.
