Banana Chocolate Bread

Ingredients

  • 1 3/4 cups all-purpose flour (235g)
  • 1 teaspoon baking soda (5g)
  • 1/2 teaspoon cinnamon (2g)
  • 2-3 ripe bananas, mashed (about 1 1/4 cups) (300g)
  • 1/4 cup plain yogurt (60g)
  • 1/2 cup unsalted butter, softened (115g)
  • 1/4 cup granulated sugar (80g)
  • 1/2 cup light brown sugar (120g)
  • 2 large eggs (111g)
  • For the chocolate mixture:
  • Half of the total batter
  • 3 tablespoons cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a mixing bowl, combine the flour, baking soda, and cinnamon.
  3. In another bowl, mash the ripe bananas using a fork or potato masher.
  4. Add the mashed bananas, yogurt, softened butter, granulated sugar, brown sugar, and eggs to the dry ingredients.
  5. Stir until all the ingredients are well combined and the batter is smooth.
  6. Divide the batter in half. In one half, stir in the cocoa powder until fully incorporated to make the chocolate mixture.
  7. Alternately spoon the plain and chocolate batters into the prepared loaf pan.
  8. Use a knife or skewer to swirl the batters together gently, creating a marbled effect.
  9. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
