Banana Chocolate Bread
Ingredients
- 1 3/4 cups all-purpose flour (235g)
- 1 teaspoon baking soda (5g)
- 1/2 teaspoon cinnamon (2g)
- 2-3 ripe bananas, mashed (about 1 1/4 cups) (300g)
- 1/4 cup plain yogurt (60g)
- 1/2 cup unsalted butter, softened (115g)
- 1/4 cup granulated sugar (80g)
- 1/2 cup light brown sugar (120g)
- 2 large eggs (111g)
- For the chocolate mixture:
- Half of the total batter
- 3 tablespoons cocoa powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a mixing bowl, combine the flour, baking soda, and cinnamon.
- In another bowl, mash the ripe bananas using a fork or potato masher.
- Add the mashed bananas, yogurt, softened butter, granulated sugar, brown sugar, and eggs to the dry ingredients.
- Stir until all the ingredients are well combined and the batter is smooth.
- Divide the batter in half. In one half, stir in the cocoa powder until fully incorporated to make the chocolate mixture.
- Alternately spoon the plain and chocolate batters into the prepared loaf pan.
- Use a knife or skewer to swirl the batters together gently, creating a marbled effect.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
