Healthy Orange Cake

Ingredients

  • 3/4 cup sweetener (180g) (I used monk fruit sweetener)
  • Zest of 2 oranges
  • 4 large eggs, separated into whites and yolks (225g)
  • 1 tablespoon vanilla extract (15g)
  • 1/2 cup olive oil (120ml)
  • 1/2 cup orange juice (120ml)
  • 2 1/2 cups almond flour (300g)
  • 1 tablespoon baking powder
  • Sliced almonds

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a large bowl, mix together the sweetener and orange zest until well combined.
  3. Add the egg yolks and vanilla extract to the sweetener mixture, and beat until smooth.
  4. Gradually pour in the olive oil and orange juice, mixing until fully incorporated.
  5. Stir in the almond flour and baking powder until the batter is smooth.
  6. In a separate bowl, beat the egg whites until stiff peaks form.
  7. Gently fold the beaten egg whites into the batter until evenly combined.
  8. Pour the batter into a greased or lined cake pan.
  9. Sprinkle sliced almonds on top of the batter for added texture and flavor.
  10. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool before slicing and serving. Enjoy this delicious and healthy orange cake as a delightful treat!
