Healthy Orange Cake
Ingredients
- 3/4 cup sweetener (180g) (I used monk fruit sweetener)
- Zest of 2 oranges
- 4 large eggs, separated into whites and yolks (225g)
- 1 tablespoon vanilla extract (15g)
- 1/2 cup olive oil (120ml)
- 1/2 cup orange juice (120ml)
- 2 1/2 cups almond flour (300g)
- 1 tablespoon baking powder
- Sliced almonds
Instructions
- Preheat your oven to 350°F (180°C).
- In a large bowl, mix together the sweetener and orange zest until well combined.
- Add the egg yolks and vanilla extract to the sweetener mixture, and beat until smooth.
- Gradually pour in the olive oil and orange juice, mixing until fully incorporated.
- Stir in the almond flour and baking powder until the batter is smooth.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the batter until evenly combined.
- Pour the batter into a greased or lined cake pan.
- Sprinkle sliced almonds on top of the batter for added texture and flavor.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before slicing and serving. Enjoy this delicious and healthy orange cake as a delightful treat!
