Ingredients

  • Lemon brownies:
  • 1 1/4 cups caster or granulated sugar (250g)
  • Zest of 2 lemons
  • 1 1/2 sticks unsalted butter, melted and cooled (170g)
  • 2 large eggs, at room temperature
  • 2 large egg yolks, at room temperature
  • 1/2 tsp vanilla bean paste or 1 tsp vanilla extract
  • 3 tbsp freshly squeezed lemon juice (45g)
  • 1 1/4 cups plain gluten-free flour blend (150g)
  • 1/2 tsp xanthan gum (or 1/4 tsp if your flour blend already contains it)
  • 1/4 tsp salt
  • Lemon cream cheese icing:
  • 1 cup powdered sugar, sifted (120g)
  • 1/4 cup full-fat cream cheese, at room temperature (55g)
  • 2 tsp freshly squeezed lemon juice (10g)
  • Zest of 1/2 lemon
  • 1/2 tsp vanilla bean paste or 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350ºF (180ºC) and line a 9-inch square baking pan with parchment paper, leaving some overhang for easy removal later.
  2. In a large bowl, combine the sugar and lemon zest, rubbing them together with your fingertips to release those aromatic oils.
  3. Add the melted butter, eggs, egg yolks, and vanilla to the sugar-zest mixture, whisking until smooth.
  4. Stir in the lemon juice until well combined.
  5. In a separate bowl, whisk together the gluten-free flour blend, xanthan gum, and salt.
  6. Add the dry ingredients to the wet mixture, whisking until you have a smooth batter.
  7. Pour the batter into the prepared baking pan, smoothing out the top.
  8. Bake for 20-22 minutes until golden on top and slightly soft to the touch.
  9. Let the brownies cool completely in the pan before spreading on the lemon cream cheese icing.
