No-Bake Cake on Crackers
Ingredients
- 500g crackers
- 1 vanilla pudding mix
- 2 cups (500 ml) milk + 2 tablespoons sugar
- 1/2 cup (125g) butter
- 1 1/4 cups (300 ml) heavy cream (30% fat)
- 8.8 oz (250g) mascarpone cheese + 1 teaspoon gelatin dissolved in 3 tablespoons hot water
- 1 can of caramel spread
- 8.8 oz (250g) red currant jam
- 1.8 oz (50g) grated chocolate
Instructions
- Prepare the pudding according to the package instructions. Let it cool down, then blend it with softened butter until smooth.
- Whip the heavy cream with mascarpone until stiff peaks form.
- Dissolve gelatin in hot water, then add a spoonful of the whipped cream mixture, stir, and add to the rest of the whipped cream. Mix until combined.
- Arrange a layer of crackers on the bottom of a baking dish. Spread the pudding mixture over them, then cover with another layer of crackers and spread caramel spread evenly over the crackers.
- Add a final layer of crackers and spread red currant jam over them.
- Cover everything with the whipped cream mixture and sprinkle grated chocolate on top.
- Chill the cake in the fridge for a few hours before serving. Enjoy your delicious no-bake treat!
