This recipe is not only super simple but also incredibly quick to make. Imagine a creamy vanilla pudding mixed with butter, fluffy whipped cream, and layers of crispy crackers. Topped with rich caramel spread, tangy red currant jam, and a generous sprinkle of grated chocolate, it’s a dessert dream come true.

Ingredients

  • 500g crackers
  • 1 vanilla pudding mix
  • 2 cups (500 ml) milk + 2 tablespoons sugar
  • 1/2 cup (125g) butter
  • 1 1/4 cups (300 ml) heavy cream (30% fat)
  • 8.8 oz (250g) mascarpone cheese + 1 teaspoon gelatin dissolved in 3 tablespoons hot water
  • 1 can of caramel spread
  • 8.8 oz (250g) red currant jam
  • 1.8 oz (50g) grated chocolate

Instructions

  1. Prepare the pudding according to the package instructions. Let it cool down, then blend it with softened butter until smooth.
  2. Whip the heavy cream with mascarpone until stiff peaks form.
  3. Dissolve gelatin in hot water, then add a spoonful of the whipped cream mixture, stir, and add to the rest of the whipped cream. Mix until combined.
  4. Arrange a layer of crackers on the bottom of a baking dish. Spread the pudding mixture over them, then cover with another layer of crackers and spread caramel spread evenly over the crackers.
  5. Add a final layer of crackers and spread red currant jam over them.
  6. Cover everything with the whipped cream mixture and sprinkle grated chocolate on top.
  7. Chill the cake in the fridge for a few hours before serving. Enjoy your delicious no-bake treat!
