Fluffy & Spongey Apple Cake

Ingredients

  • Cake:
  • 1/4 cup vegetable oil
  • 80 g all-purpose flour
  • 80 g potato starch
  • 1/3 cup sugar
  • 4 eggs
  • 1 teaspoon baking powder
  • Apples:
  • 7 apples
  • 3 tablespoons brown sugar
  • 2 tablespoons semolina

Instructions

Peel and chop the apples into cubes. Put them in a pot, cover, and sauté for about 15 minutes. After 15 minutes, add the sugar, mix, and cook uncovered for a few more minutes. Finally, add the semolina and let it cool.

Beat the eggs with sugar until fluffy, then slowly pour in the oil. Sift the all-purpose flour with potato starch, add the baking powder, and gently fold it into the batter. Pour about 2/3 of the batter into a baking pan lined with parchment paper. Bake at 170°C for 20 minutes (set aside the remaining batter without mixing to keep it fluffy).

After this time, carefully remove and let it cool for 5 minutes. Then spread the cooked apples over the base, and pour the remaining batter over the apples. Bake at 170°C for about 35 to 40 minutes.
