Colorful Sprinkle Cake
Ingredients
- For the cake:
- 2 cups (270g) all-purpose flour
- 1 1/2 cups (345g) granulated sugar
- 4 teaspoons baking powder
- Pinch of salt
- 1/2 cup (120g) vegetable oil
- 2 large eggs
- 2/3 cup (180g) sour cream
- 2/3 cup (200g) plain Greek yogurt
- 1 teaspoon vanilla extract
- For the frosting:
- 3/4 cup (170g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 3 tablespoons (45g) heavy cream
- 1 teaspoon vanilla extract
- Sprinkles for decorating
Instructions
For the cake:
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, mix together 2 cups (270g) of flour, 1 1/2 cups (345g) of sugar, 4 teaspoons of baking powder, and a pinch of salt.
- Add 1/2 cup (120g) of oil, 2 large eggs, 2/3 cup (180g) of sour cream, 2/3 cup (200g) of plain Greek yogurt, and 1 teaspoon of vanilla extract. Stir until well combined.
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool completely before frosting.
For the frosting:
- In a mixing bowl, beat 3/4 cup (170g) of softened unsalted butter until creamy.
- Gradually add 3 cups (360g) of powdered sugar, mixing well after each addition.
- Stir in 3 tablespoons (45g) of heavy cream and 1 teaspoon of vanilla extract until smooth.
- Once the cakes are cooled, spread a layer of frosting on top of one cake layer, then place the second cake layer on top.
- Frost the top and sides of the cake with the remaining frosting.
- Decorate with colorful sprinkles.
- Slice and enjoy your vibrant sprinkle cake!
