Coffee-Choco Pudding
Ingredients
- 3 and 3/4 cups water
- 1/2 cup cornstarch
- 1 cup powdered milk
- 1/2 cup sugar
- 1 tablespoon custard powder
- 1/2 teaspoon vanilla extract
- A pinch of salt
- 1 tablespoon butter
- 2 tablespoons instant coffee
- 4 tablespoons water
- Chocolate Ganache:
- 3.5 ounces chocolate
- 1/4 cup oil
Instructions
- In a saucepan, combine the water, cornstarch, powdered milk, sugar, custard powder, vanilla extract, and a pinch of salt.
- Cook the mixture over medium heat, stirring constantly until it thickens.
- Once the mixture thickens, add the butter and stir until it melts and incorporates.
- Dissolve the instant coffee in 4 tablespoons of water, then add it to the mixture and stir well.
- Cook the mixture for a few more minutes until it reaches a pudding-like consistency. Remove it from heat.
- Pour the mixture into serving cups or bowls and let it cool to room temperature.
- To make the chocolate ganache, melt the chocolate and oil together in a double boiler or microwave until smooth.
- Once the pudding has cooled, pour the chocolate ganache over the top.
- Allow the pudding to set in the refrigerator for at least an hour before serving.
- Serve chilled and enjoy your delightful mood-changing dessert!
