Coffee-Choco Pudding

Ingredients

  • 3 and 3/4 cups water
  • 1/2 cup cornstarch
  • 1 cup powdered milk
  • 1/2 cup sugar
  • 1 tablespoon custard powder
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • 1 tablespoon butter
  • 2 tablespoons instant coffee
  • 4 tablespoons water
  • Chocolate Ganache:
  • 3.5 ounces chocolate
  • 1/4 cup oil

Instructions

  1. In a saucepan, combine the water, cornstarch, powdered milk, sugar, custard powder, vanilla extract, and a pinch of salt.
  2. Cook the mixture over medium heat, stirring constantly until it thickens.
  3. Once the mixture thickens, add the butter and stir until it melts and incorporates.
  4. Dissolve the instant coffee in 4 tablespoons of water, then add it to the mixture and stir well.
  5. Cook the mixture for a few more minutes until it reaches a pudding-like consistency. Remove it from heat.
  6. Pour the mixture into serving cups or bowls and let it cool to room temperature.
  7. To make the chocolate ganache, melt the chocolate and oil together in a double boiler or microwave until smooth.
  8. Once the pudding has cooled, pour the chocolate ganache over the top.
  9. Allow the pudding to set in the refrigerator for at least an hour before serving.
  10. Serve chilled and enjoy your delightful mood-changing dessert!
