Chocolate Popsicles

Ingredients

  • (113g.) 4 ounces of dark chocolate (60%-70%)
  • (250g.) 1 cup heavy cream (35-38% fat)
  • (180g.) 3/4 cup sweetened condensed milk
  • 5 drops almond extract or 1 tsp vanilla extract
  • (11g.) 2 tbsp unsweetened cocoa powder
  • Sliced almonds and coarse salt (optional for decoration)

Instructions

  1. Melt the chocolate using a double boiler or in 30-second intervals in the microwave. Let it cool slightly.
  2. In another bowl, whip the heavy cream until stiff peaks form. Add the sweetened condensed milk, almond extract, cocoa powder, and melted chocolate. Gently fold everything together until well combined.
  3. Transfer the mixture into popsicle molds, decorate with sliced almonds, and freeze for 8 hours.
  4. Unmold and enjoy!
