Chocolate Mousse Cake

Ingredients

  • For the Cake:
  • 4 eggs
  • 270g granulated sugar
  • 100ml vegetable oil
  • 1 cup cocoa powder
  • 200ml warm water
  • 240g all-purpose flour
  • Pinch of salt
  • 1 tsp vanilla essence
  • 1 tbsp baking powder
  • For the Mousse:
  • 600g dark chocolate
  • 300g heavy cream
  • 230g whipped cream
  • 12g unflavored gelatin (already hydrated, follow package instructions)
  • For the Ganache:
  • 200g dark chocolate
  • 100g heavy cream

Instructions

  1. Start with the cake. Mix all the ingredients thoroughly and bake in a preheated oven for 20-25 minutes or until fully cooked.
  2. Now, prepare the ganache. Stir chocolate with heavy cream and microwave in 30-second intervals until everything blends into a smooth mixture. Set aside to cool.
  3. Then, incorporate the whipped cream and, finally, the hydrated gelatin into the ganache. Place it in a mold lined with acetate, starting with a layer of cake (if it's too high, level it or cut it in half), and finish with the mousse.
  4. Freeze for 1 hour or refrigerate for 3 hours.
  5. Once set, pour the ganache on top and decorate as you please! (Make the ganache the same way as the mousse.)
