Ingredients

  • Cookies:
  • 1 cup or 2 sticks of butter (220g)
  • 1 cup white sugar (225g)
  • 1 tablespoon vanilla extract
  • 2 large eggs (115g)
  • Red or pink food coloring
  • 3 cups all-purpose flour (420g)
  • 1 teaspoon baking powder (5g)
  • 1/2 teaspoon salt (2g)
  • Royal Icing*:
  • 4 cups powdered sugar
  • 1/4 cup meringue powder*
  • 6-8 tablespoons water
  • 1 teaspoon vanilla extract
  • *You can find meringue powder at specialized pastry shops like @mychocolatisimo
  • *Let the icing dry for 4-5 hours to harden completely.

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
  4. Mix in a few drops of red or pink food coloring to achieve the desired color for your cookies.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  7. Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
  8. Use heart-shaped cookie cutters to cut out the cookies and place them onto the prepared baking sheets.
  9. Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  11. While the cookies are cooling, prepare the royal icing by mixing together the powdered sugar, meringue powder, water, and vanilla extract until smooth and glossy.
  12. Once the cookies are completely cooled, decorate them with the royal icing using a piping bag or spoon.
  13. Let the icing dry for 4-5 hours to harden completely before serving or packaging the cookies.
