Apple and Cinnamon Cake

Ingredients

  • 3 cups (375g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • 2 tablespoons ground cinnamon
  • 1/2 teaspoon grated nutmeg
  • 1 cup (240g) sunflower oil
  • 1/2 cup (120g) plain yogurt or sour cream
  • 3 large eggs
  • 1 cup (100g) brown sugar
  • 1/2 cup (150g) white sugar
  • 2 Granny Smith apples

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large bowl, mix together the flour, baking soda, cinnamon, and nutmeg.
  3. In another bowl, whisk together the oil, yogurt or sour cream, eggs, and both sugars until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Peel and dice the apples, then fold them into the batter.
  6. Pour the batter into a greased baking pan.
  7. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool before slicing and serving.
