Soft Gingerbread Cookies filled with Plum Jam

Ingredients

  • 2/3 cup honey
  • 4 tablespoons gingerbread spice mix
  • 120g butter
  • 3 tablespoons sour cream (18% fat)
  • 1.5 teaspoons baking soda
  • 3 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 egg white
  • 4 tablespoons sugar
  • 4 egg yolks
  • Plum jam

Instructions

  1. In a saucepan, heat the honey, gingerbread spice mix, butter, and sour cream until well combined.
  2. Remove from heat and let it cool down.
  3. In a bowl, mix together the baking soda, flour, cocoa powder, egg white, sugar, and egg yolks.
  4. Gradually add the cooled honey mixture to the dry ingredients and knead until a smooth dough forms.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  7. Roll out the dough on a floured surface to about 5mm thickness.
  8. Cut out cookies using cookie cutters and place them on the prepared baking sheet.
  9. Make a small indentation in the center of each cookie and fill it with plum jam.
  10. Bake for 10-12 minutes or until lightly golden.
  11. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
