Soft Gingerbread Cookies filled with Plum Jam
Ingredients
- 2/3 cup honey
- 4 tablespoons gingerbread spice mix
- 120g butter
- 3 tablespoons sour cream (18% fat)
- 1.5 teaspoons baking soda
- 3 cups all-purpose flour
- 2 tablespoons cocoa powder
- 1 egg white
- 4 tablespoons sugar
- 4 egg yolks
- Plum jam
Instructions
- In a saucepan, heat the honey, gingerbread spice mix, butter, and sour cream until well combined.
- Remove from heat and let it cool down.
- In a bowl, mix together the baking soda, flour, cocoa powder, egg white, sugar, and egg yolks.
- Gradually add the cooled honey mixture to the dry ingredients and knead until a smooth dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Roll out the dough on a floured surface to about 5mm thickness.
- Cut out cookies using cookie cutters and place them on the prepared baking sheet.
- Make a small indentation in the center of each cookie and fill it with plum jam.
- Bake for 10-12 minutes or until lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
