Lemon and Olive Oil Bread

Ingredients

  • 2 1/2 cups all-purpose flour (300g)
  • 2/3 cup almond flour (80g)
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons lemon zest
  • 3/4 cup Borges® Extra Virgin Olive Oil (135g) (available at Super 99)
  • 3 large eggs (162g)
  • 1 tablespoon vanilla extract (15g)
  • 3/4 cup unsweetened plain yogurt (150g)
  • 3 tablespoons lemon juice (45g)
  • 3/4 cup sugar (180g)

Instructions

  1. Preheat the oven to 350°F (180°C). Grease and line a rectangular baking pan with parchment paper extending over the sides.
  2. In a bowl, mix all the dry ingredients: all-purpose flour, almond flour, baking powder, baking soda, salt, and lemon zest.
  3. In another bowl, whisk Borges® Extra Virgin Olive Oil with eggs, vanilla extract, yogurt, lemon juice, and sugar for 1 minute.
  4. Pour the wet mixture into the bowl of dry ingredients and mix until no lumps remain.
  5. Pour the batter into the prepared pan evenly. Use a spatula or knife to make a line in the center of the batter and drizzle with a little olive oil.
  6. Bake in the preheated oven for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  7. Let it cool completely before slicing and enjoying!
