Lemon and Olive Oil Bread
Ingredients
- 2 1/2 cups all-purpose flour (300g)
- 2/3 cup almond flour (80g)
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons lemon zest
- 3/4 cup Borges® Extra Virgin Olive Oil (135g) (available at Super 99)
- 3 large eggs (162g)
- 1 tablespoon vanilla extract (15g)
- 3/4 cup unsweetened plain yogurt (150g)
- 3 tablespoons lemon juice (45g)
- 3/4 cup sugar (180g)
Instructions
- Preheat the oven to 350°F (180°C). Grease and line a rectangular baking pan with parchment paper extending over the sides.
- In a bowl, mix all the dry ingredients: all-purpose flour, almond flour, baking powder, baking soda, salt, and lemon zest.
- In another bowl, whisk Borges® Extra Virgin Olive Oil with eggs, vanilla extract, yogurt, lemon juice, and sugar for 1 minute.
- Pour the wet mixture into the bowl of dry ingredients and mix until no lumps remain.
- Pour the batter into the prepared pan evenly. Use a spatula or knife to make a line in the center of the batter and drizzle with a little olive oil.
- Bake in the preheated oven for 60-70 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool completely before slicing and enjoying!
