Strawberry Tres Leches Cake

Ingredients

  • Strawberry Milk:
  • 1/2 lb. strawberries, cleaned and sliced (227g)
  • 3/4 cup sugar (180g)
  • 1 can evaporated milk (315g)
  • 1 1/2 cups whole milk (362g)
  • 1 can cream (225g)
  • Cake:
  • 1 1/2 cups flour (175g)
  • 1 1/2 teaspoons baking powder (4g)
  • 1/2 teaspoon salt (4g)
  • 6 large eggs, separated (324g)
  • 1 cup sugar (230g)
  • 1 teaspoon vanilla extract (5g)
  • 1/3 cup whole milk (85g)
  • Topping:
  • Whipped cream
  • Sliced strawberries

Instructions

  1. For the strawberry milk, blend strawberries with sugar for 1 minute. Add evaporated milk, whole milk, cream, and blend for another 30 seconds. Let it sit in the refrigerator for 1 hour while you prepare the cake.
  2. Preheat the oven to 350°F (180°C).
  3. For the cake, mix flour, baking powder, and salt.
  4. In a separate bowl, beat egg yolks with sugar for 3 minutes until pale. Add vanilla, milk, and beat for 30 seconds more.
  5. Pour the yolk mixture into the flour mixture and beat until no lumps remain.
  6. In another bowl, beat egg whites until stiff peaks form. Gently fold the whipped egg whites into the batter.
  7. Pour the batter into a greased pan and bake for 20 minutes at 350°F (180°C). Let it cool and poke holes with a fork or toothpick.
  8. Strain the strawberry milk mixture to remove strawberry seeds. Add strawberry extract and mix.
  9. Pour the strawberry milk mixture over the cake, cover, and refrigerate for at least 6 hours.
  10. Finally, top it with whipped cream, sliced strawberries, and enjoy! ✨
