Gingerbread Cheesecake
Ingredients
- For the crust⤵️
- 1 1/2 cups (about 150g) crushed Maria biscuits (approximately 30 biscuits)
- 5 tablespoons (70g) melted butter
- For the Cheesecake (all at room temperature):⤵️
- 2 packages (448g) cream cheese
- 3/4 cup (200g) Sweetened Condensed Milk
- 1/2 cup (150g) plain yogurt
- 1 tablespoon (15ml) lemon juice
- 2 large eggs
- 2 teaspoons ginger
- 2 teaspoons cinnamon
- 1 teaspoon allspice
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a bowl, mix the crushed Maria biscuits and melted butter until well combined. Press the mixture evenly into the bottom of the prepared pan to form the crust.
- In another bowl, beat the cream cheese until smooth. Add the Sweetened Condensed Milk, yogurt, lemon juice, eggs, ginger, cinnamon, and allspice, and beat until creamy and well blended.
- Pour the cheesecake batter over the crust in the pan, spreading it evenly.
- Bake in the preheated oven for about 45-50 minutes, or until the edges are set but the center still jiggles slightly.
- Remove from the oven and let it cool completely at room temperature. Then refrigerate for at least 4 hours or overnight to set.
- Once chilled and set, slice and serve your delicious Gingerbread Cheesecake. Enjoy the festive flavors!
