Gingerbread Cheesecake

Ingredients

  • For the crust⤵️
  • 1 1/2 cups (about 150g) crushed Maria biscuits (approximately 30 biscuits)
  • 5 tablespoons (70g) melted butter
  • For the Cheesecake (all at room temperature):⤵️
  • 2 packages (448g) cream cheese
  • 3/4 cup (200g) Sweetened Condensed Milk
  • 1/2 cup (150g) plain yogurt
  • 1 tablespoon (15ml) lemon juice
  • 2 large eggs
  • 2 teaspoons ginger
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a bowl, mix the crushed Maria biscuits and melted butter until well combined. Press the mixture evenly into the bottom of the prepared pan to form the crust.
  3. In another bowl, beat the cream cheese until smooth. Add the Sweetened Condensed Milk, yogurt, lemon juice, eggs, ginger, cinnamon, and allspice, and beat until creamy and well blended.
  4. Pour the cheesecake batter over the crust in the pan, spreading it evenly.
  5. Bake in the preheated oven for about 45-50 minutes, or until the edges are set but the center still jiggles slightly.
  6. Remove from the oven and let it cool completely at room temperature. Then refrigerate for at least 4 hours or overnight to set.
  7. Once chilled and set, slice and serve your delicious Gingerbread Cheesecake. Enjoy the festive flavors!
