Delicious Honey Cake

Ingredients

  • For the Cake:
  • 5 eggs
  • 1 1/4 cups sugar
  • 1 cup unsalted butter
  • 5 tbsp honey
  • 1 tsp baking soda
  • about 6 cups all-purpose flour
  • For the Cream:
  • 5 1/2 cups milk
  • 2 egg yolks
  • 3/4 cup sugar
  • 1/4 tsp vanilla extract
  • 7 tbsp cornstarch
  • 1 cup unsalted butter
  • 7/8 cup condensed milk

Instructions

  1. Combine eggs with sugar, then add unsalted butter, honey, and baking soda. Place over a double boiler and mix until the sugar dissolves. The mixture will start to foam up; stir vigorously for about 3-4 minutes, then remove from heat. Let it sit for 5 minutes, then add flour and knead the dough. Divide the dough into 6 parts, roll out thinly, and bake in a preheated oven at 390°F (200°C) for about 3-4 minutes until golden brown.
  2. Prepare the cream. Combine egg yolks with sugar and mix well. Add cornstarch and mix until smooth. Pour in the milk and cook over medium heat, stirring constantly until the cream thickens. Cover with plastic wrap and let it cool. Beat the unsalted butter for 5 minutes, then add 1 tbsp of the cooled custard cream and condensed milk at a time, beating after each addition until smooth.
  3. Assemble the cake and refrigerate for at least 5 hours, preferably overnight.
