Delicious Cheesecake with Gingerbread Crust

Ingredients

  • 2 cups all-purpose flour
  • 5 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 stick (½ cup) cold butter, diced
  • 1 egg
  • 2 teaspoons gingerbread spice
  • Cheesecake Filling
  • 28 ounces ground cottage cheese
  • 1 ⅓ cups sugar (if you prefer sweeter, add more sugar 😃)
  • 1 packet vanilla pudding mix
  • 1 egg
  • Additionally:
  • 3 tablespoons jam (I used sugar-free)

Instructions

  1. In a bowl, combine flour, sugar, baking powder, cold diced butter, spices, and egg. Mix until you get a smooth consistency.
  2. Shape the dough into a ball, wrap it in plastic wrap, and chill it in the refrigerator while preparing the other ingredients.
  3. Preheat the oven to 350°F (180°C) - top and bottom heat.
  4. Mix cottage cheese with sugar, pudding mix, and egg until smooth.
  5. Divide the dough for the crust and the topping into two parts. Use one part to line the bottom and about 2 cm of the sides of the pan.
  6. Spread the cheese filling over the crust, then place dollops of jam on top.
  7. Cut shapes with gingerbread molds from the remaining dough and arrange them on top.
  8. Bake in the preheated oven for 45-50 minutes.
