Delicious Cheesecake with Gingerbread Crust
Ingredients
- 2 cups all-purpose flour
- 5 tablespoons sugar
- 1 teaspoon baking powder
- 1 stick (½ cup) cold butter, diced
- 1 egg
- 2 teaspoons gingerbread spice
- Cheesecake Filling
- 28 ounces ground cottage cheese
- 1 ⅓ cups sugar (if you prefer sweeter, add more sugar 😃)
- 1 packet vanilla pudding mix
- 1 egg
- Additionally:
- 3 tablespoons jam (I used sugar-free)
Instructions
- In a bowl, combine flour, sugar, baking powder, cold diced butter, spices, and egg. Mix until you get a smooth consistency.
- Shape the dough into a ball, wrap it in plastic wrap, and chill it in the refrigerator while preparing the other ingredients.
- Preheat the oven to 350°F (180°C) - top and bottom heat.
- Mix cottage cheese with sugar, pudding mix, and egg until smooth.
- Divide the dough for the crust and the topping into two parts. Use one part to line the bottom and about 2 cm of the sides of the pan.
- Spread the cheese filling over the crust, then place dollops of jam on top.
- Cut shapes with gingerbread molds from the remaining dough and arrange them on top.
- Bake in the preheated oven for 45-50 minutes.
