Ingredients

  • Streusel topping:
  • ⅓ cup all-purpose flour (48g)
  • ¼ cup packed dark brown sugar (55g)
  • ¼ teaspoon cinnamon
  • 3 tablespoons cold unsalted butter (42g)
  • ½ cup pecan halves (65g)
  • Cinnamon swirl:
  • ¼ cup granulated sugar (50g)
  • 2 ½ teaspoons ground cinnamon
  • 1 tablespoon flour (9g)
  • Pumpkin batter:
  • 1 ¼ cup pure pumpkin puree (300ml)
  • ½ cup packed dark brown sugar (110g)
  • ½ cup granulated sugar (100g)
  • 2 large eggs at room temperature
  • ⅓ cup unsalted butter, melted (75g)
  • 1 teaspoon pure vanilla extract (5ml)
  • 1 ¾ cups all-purpose flour (250g)
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoon pumpkin pie spice
  • ⅔ cup whole milk (160ml)

Instructions

Make the streusel topping. Combine all ingredients, blending them together with your fingertips until it looks like damp crumbs. Set it aside.

Make the cinnamon swirl. Combine all ingredients until they're evenly blended.

Preheat your oven to 350 degrees F and line a 9x5-inch loaf pan with parchment paper.

For the pumpkin batter, whisk together the pumpkin puree, melted butter, both sugars, vanilla, and eggs in a large bowl until well blended.

Sift together flour, baking powder, baking soda, pumpkin spice, and salt. Add this dry mix to the wet ingredients, folding gently. Before it's all mixed, pour in the milk and continue folding until evenly combined.

Spread one-third of the batter into the prepared pan. Sprinkle half of the cinnamon sugar mixture evenly over the surface. Spoon half of the remaining batter over it, then top it with the rest of the batter. Sprinkle half of the streusel on top, add the pecans, then sprinkle on the rest of the streusel.

Bake for 50-60 minutes until firm in the middle and a skewer inserted into the center comes out clean. Let it cool for 20 minutes in the pan, then use the parchment paper to lift it onto a wire rack to finish cooling. Enjoy this scrumptious treat!
