Ingredients

  • 120g egg whites (approximately 4 egg whites)
  • ✔ 120g granulated sugar
  • ✔ 120g powdered sugar (confectioners' sugar)
  • ✔ 1 tbsp cornstarch

Instructions

  1. Preheat the oven to 100°C (212°F).
  2. In a bowl, place the egg whites and beat with an electric mixer. Once they begin to foam, add the granulated sugar gradually. Beat until stiff peaks form, and the mixture is glossy.
  3. Sift the powdered sugar with cornstarch and add it in two parts, gently folding it in with a spatula in a sweeping motion. Be careful not to overmix; the mixture should remain fluffy.
  4. Prepare a baking sheet with parchment paper or a silicone mat. (Spray with cooking spray if using low-quality parchment paper.)
  5. Spoon the meringue onto the prepared sheet, forming a circle.
  6. Bake for 1 hour at 100°C (212°F) and an additional 20 minutes at 80°C (176°F) if your oven allows. Keep an eye on them; each oven varies, so bake until they are dry
