Christmas Pavlova
Ingredients
- 120g egg whites (approximately 4 egg whites)
- ✔ 120g granulated sugar
- ✔ 120g powdered sugar (confectioners' sugar)
- ✔ 1 tbsp cornstarch
Instructions
- Preheat the oven to 100°C (212°F).
- In a bowl, place the egg whites and beat with an electric mixer. Once they begin to foam, add the granulated sugar gradually. Beat until stiff peaks form, and the mixture is glossy.
- Sift the powdered sugar with cornstarch and add it in two parts, gently folding it in with a spatula in a sweeping motion. Be careful not to overmix; the mixture should remain fluffy.
- Prepare a baking sheet with parchment paper or a silicone mat. (Spray with cooking spray if using low-quality parchment paper.)
- Spoon the meringue onto the prepared sheet, forming a circle.
- Bake for 1 hour at 100°C (212°F) and an additional 20 minutes at 80°C (176°F) if your oven allows. Keep an eye on them; each oven varies, so bake until they are dry
