Cherry Cheese Crumble Cake

Ingredients

  • For the Base + Crumble:
  • 1 cup (250g) of softened butter
  • ½ cup (120g) of sugar
  • 1 packet of vanilla sugar
  • 1 egg
  • 1 teaspoon of baking powder
  • 3 ½ cups (450g) of flour
  • Plus 2 tablespoons of flour for the crumble
  • For the Filling:
  • 2 ¼ lbs (1 kg) of quark (40% fat content)
  • 1 cup (200ml) of cream
  • 1 cup (200g) of sugar
  • 2 packets of vanilla sugar
  • 4 eggs
  • 2 packets of vanilla pudding powder

Instructions

For the Base + Crumble:

  1. Preheat your oven to 350°F (180°C) and grease a 9x13-inch baking dish.
  2. In a large mixing bowl, cream together the softened butter, sugar, and vanilla sugar until smooth.
  3. Add the egg and mix until well combined.
  4. Stir in the baking powder, then gradually add the flour, mixing until a dough forms.
  5. Press about two-thirds of the dough evenly into the bottom of the prepared baking dish to form the base.
  6. Add the remaining 2 tablespoons of flour to the remaining dough to create the crumble mixture. Set aside.

For the Filling:

  1. In another mixing bowl, combine the quark, cream, sugar, vanilla sugar, eggs, and vanilla pudding powder. Mix until smooth and well combined.
  2. Spread the quark mixture evenly over the dough base in the baking dish.
  3. Evenly distribute the pitted cherries over the quark mixture.
  4. Sprinkle the reserved crumble mixture over the top of the cherries.

Baking:

  1. Place the baking dish in the preheated oven and bake for about 45 minutes, or until the top is golden brown and the filling is set.
  2. Remove from the oven and let it cool slightly before slicing and serving.
