Cherry Cheese Crumble Cake
Ingredients
- For the Base + Crumble:
- 1 cup (250g) of softened butter
- ½ cup (120g) of sugar
- 1 packet of vanilla sugar
- 1 egg
- 1 teaspoon of baking powder
- 3 ½ cups (450g) of flour
- Plus 2 tablespoons of flour for the crumble
- For the Filling:
- 2 ¼ lbs (1 kg) of quark (40% fat content)
- 1 cup (200ml) of cream
- 1 cup (200g) of sugar
- 2 packets of vanilla sugar
- 4 eggs
- 2 packets of vanilla pudding powder
Instructions
For the Base + Crumble:
- Preheat your oven to 350°F (180°C) and grease a 9x13-inch baking dish.
- In a large mixing bowl, cream together the softened butter, sugar, and vanilla sugar until smooth.
- Add the egg and mix until well combined.
- Stir in the baking powder, then gradually add the flour, mixing until a dough forms.
- Press about two-thirds of the dough evenly into the bottom of the prepared baking dish to form the base.
- Add the remaining 2 tablespoons of flour to the remaining dough to create the crumble mixture. Set aside.
For the Filling:
- In another mixing bowl, combine the quark, cream, sugar, vanilla sugar, eggs, and vanilla pudding powder. Mix until smooth and well combined.
- Spread the quark mixture evenly over the dough base in the baking dish.
- Evenly distribute the pitted cherries over the quark mixture.
- Sprinkle the reserved crumble mixture over the top of the cherries.
Baking:
- Place the baking dish in the preheated oven and bake for about 45 minutes, or until the top is golden brown and the filling is set.
- Remove from the oven and let it cool slightly before slicing and serving.
