  • 6 tablespoons of melted unsalted butter (85 grams)
  • Streusel Topping:
  • 1/3 cup of old-fashioned whole rolled oats (28 grams)
  • 3 tablespoons of all-purpose flour (24 grams)
  • 3 tablespoons of packed light or dark brown sugar (40 grams)
  • 1/2 teaspoon of ground cinnamon
  • 2 tablespoons of cold, cubed unsalted butter (28 grams)
  • Apple Layer:
  • 2 cups of peeled, thinly sliced, and chopped apples (250 grams)
  • 1 tablespoon of packed light or dark brown sugar (13 grams)
  • 1 teaspoon of lemon juice
  • 1/2 teaspoon of ground cinnamon
  • 2–3 tablespoons of salted caramel (plus more for topping)
  • Cheesecake Filling:
  • 12 ounces of softened full-fat brick cream cheese (339 grams)
  • 1/2 cup of packed light or dark brown sugar (100 grams)
  • 3 tablespoons of sour cream (45 grams)
  • 1 teaspoon of pure vanilla extract (5 milliliters)
  • 1 large egg, at room temperature

Instructions

  1. Preheat your oven to 350°F (177°C) and have your salted caramel ready.
  2. For the crust: Combine graham cracker crumbs, granulated sugar, and melted butter. Pat the mixture into an ungreased 9-inch pie dish, pressing it gently. Bake this for 10 minutes.
  3. While the crust bakes, make the streusel topping by mixing oats, flour, brown sugar, cinnamon, and cubed butter until crumbly. Chill this mixture.
  4. Prepare the apples by tossing them with brown sugar, lemon juice, and cinnamon.
  5. For the cheesecake filling: Beat cream cheese and brown sugar until smooth. Add sour cream, vanilla, and egg, beating until combined.
  6. Assemble the layers: Spread the cheesecake filling into the crust, then layer with prepared apples and drizzle salted caramel. Sprinkle the chilled streusel topping evenly.
  7. Reduce the oven temperature to 325°F (163°C) and bake the pie for 45 minutes. Tent it with foil to avoid over-browning.
  8. Let the pie cool for an hour at room temperature, then refrigerate for at least 2 hours or up to 2 days before serving. Drizzle more salted caramel before serving for that extra delight.
