Raspberry Cloud Dessert Cups
Ingredients
- Ladyfingers
- 1 raspberry jelly
- 1.7 cups hot water (400 ml)
- 5.3 oz frozen or fresh raspberries (150g)
- 6.8 fl oz heavy cream (200 ml)
- 3.5 oz mascarpone (100g)
- 2-3 tbsp powdered sugar
- A few meringues
- Almond flakes
Instructions
- Dissolve the raspberry jelly in hot water and let it cool.
- Add raspberries to the jelly and mix.
- Spread the slightly set jelly over the ladyfingers.
- Chill in the fridge until firm.
- In a bowl, whip the heavy cream with mascarpone and powdered sugar.
- Spread the cream mixture over the set jelly layer.
- Chill again for 2-3 hours.
- Before serving, crush the meringues and sprinkle them with almond flakes.
- Enjoy your delicious dessert!
