Raspberry Cloud Dessert Cups

Ingredients

  • Ladyfingers
  • 1 raspberry jelly
  • 1.7 cups hot water (400 ml)
  • 5.3 oz frozen or fresh raspberries (150g)
  • 6.8 fl oz heavy cream (200 ml)
  • 3.5 oz mascarpone (100g)
  • 2-3 tbsp powdered sugar
  • A few meringues
  • Almond flakes

Instructions

  1. Dissolve the raspberry jelly in hot water and let it cool.
  2. Add raspberries to the jelly and mix.
  3. Spread the slightly set jelly over the ladyfingers.
  4. Chill in the fridge until firm.
  5. In a bowl, whip the heavy cream with mascarpone and powdered sugar.
  6. Spread the cream mixture over the set jelly layer.
  7. Chill again for 2-3 hours.
  8. Before serving, crush the meringues and sprinkle them with almond flakes.
  9. Enjoy your delicious dessert!
