Chia Pudding with Berries and Pineapple

Ingredients

  • 2 tablespoons of chia seeds (25g)
  • 1/2 cup of milk or plant-based milk (120g)
  • 1 teaspoon of honey or your favorite sweetener (5g)
  • 1 teaspoon of vanilla extract (5g)
  • A pinch of cinnamon
  • For serving:
  • Your favorite fruits

Instructions

  1. In a bowl, mix together the chia seeds, milk, honey (or sweetener), vanilla extract, and a pinch of cinnamon. Stir well to combine.
  2. Cover the bowl and refrigerate the mixture for 4-6 hours, or overnight, until it thickens into a pudding-like consistency.
  3. When ready to serve, stir the chia pudding mixture to ensure it's well combined.
  4. Spoon the pudding into serving bowls or glasses.
  5. Top with your favorite fruits, such as blueberries, strawberries, raspberries, and pineapple chunks.
