Best Chocolate Chip Muffins
Ingredients
- 2 1/2 cups (235g) all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (200g) granulated sugar
- 1 1/4 cups (355g) plain Greek yogurt (unsweetened)
- 2 medium eggs
- 2 tablespoons (30g) sunflower oil
- 2 teaspoons (10g) vanilla extract
- 1/2 cup (110g) melted butter
- 1 1/4 cups (150g) semi-sweet chocolate chips
- Sugar and chocolate chips for decoration
Instructions
- Preparation:
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Mixing the Dry Ingredients:
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
- Preparing the Wet Ingredients:
- In another bowl, mix together the granulated sugar, Greek yogurt, eggs, sunflower oil, and vanilla extract until smooth.
- Gradually pour in the melted butter while stirring continuously until fully incorporated.
- Combining Wet and Dry Ingredients:
- Pour the wet ingredients into the bowl with the dry ingredients and gently fold together until just combined. Be careful not to overmix.
- Fold in the chocolate chips until evenly distributed throughout the batter.
- Filling the Muffin Cups:
- Spoon the batter into the prepared muffin cups, filling each about three-quarters full.
- Decorating:
- Sprinkle some sugar and additional chocolate chips on top of each muffin for decoration.
- Baking:
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
