Ingredients

  • 2 1/2 cups (235g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 1 1/4 cups (355g) plain Greek yogurt (unsweetened)
  • 2 medium eggs
  • 2 tablespoons (30g) sunflower oil
  • 2 teaspoons (10g) vanilla extract
  • 1/2 cup (110g) melted butter
  • 1 1/4 cups (150g) semi-sweet chocolate chips
  • Sugar and chocolate chips for decoration

Instructions

  1. Preparation:
  2. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  3. Mixing the Dry Ingredients:
  4. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  5. Preparing the Wet Ingredients:
  6. In another bowl, mix together the granulated sugar, Greek yogurt, eggs, sunflower oil, and vanilla extract until smooth.
  7. Gradually pour in the melted butter while stirring continuously until fully incorporated.
  8. Combining Wet and Dry Ingredients:
  9. Pour the wet ingredients into the bowl with the dry ingredients and gently fold together until just combined. Be careful not to overmix.
  10. Fold in the chocolate chips until evenly distributed throughout the batter.
  11. Filling the Muffin Cups:
  12. Spoon the batter into the prepared muffin cups, filling each about three-quarters full.
  13. Decorating:
  14. Sprinkle some sugar and additional chocolate chips on top of each muffin for decoration.
  15. Baking:
  16. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
