White Michałki Dream Cake with Cherry Jam

Ingredients

  • MICHAŁKI CREAM:
  • ▫️ 2 cups (500 ml) heavy cream
  • ▫️ 7 oz (200 g) white Michałki candies
  • ▫️ 3.5 oz (100 g) white chocolate (reduce to 1.75 oz if you prefer less sweetness)
  • ▫️ 17.5 oz (500 g) mascarpone cheese
  • TOPPING:
  • ▫️ 5.3 oz (150 g) white chocolate
  • ▫️ 1/3 cup (80 ml) heavy cream
  • ▫️ 1 oz (30 g) salted peanuts
  • EXTRAS:
  • ▫️ About 17.5 oz (500 g) butter cookies (like Bonitki)
  • ▫️ Jar of cherry jam

Instructions

    Heat the heavy cream, then add chopped Michałki candies and chocolate. Stir until melted, cool, and chill in the fridge for 8 hours. Afterward, whip the mixture with mascarpone into a stiff cream. In a 10x10 inch (25x25 cm) dish, layer: butter cookies, 1/4 of the cream, more cookies, cherry jam, another 1/4 of the cream, more cookies, jam, another 1/4 of the cream, more cookies, and the remaining cream. For the topping, melt the chocolate with cream, mix in chopped peanuts, and spread over the cake. Refrigerate overnight.
