  • 2 eggs
  • A pinch of salt
  • 1 packet of vanilla sugar
  • 60 g sugar
  • 1 tbsp rum
  • 1 tbsp oil
  • Beat until creamy
  • 50 g flour
  • 25 g cornstarch
  • Mix in until smooth
  • Bake at 180°C (350°F) in a convection oven for about 12-15 minutes until golden brown.
  • For the Cream:
  • 500 g mascarpone cheese
  • 100 g powdered sugar
  • Mix until smooth, then add 50 ml eggnog
  • 250 ml heavy cream
  • 2 tbsp cappuccino powder
  • Beat until the cream is firm.


    Spread a layer of cream over the baked sponge cake. Dip the ladyfingers in coffee and a splash of rum, then layer them over the cream. Spread the remaining cream over the ladyfingers. Cover and refrigerate for 2-3 hours before serving. Dust with cocoa powder just before serving. Use a 26 cm baking pan. Enjoy this heavenly treat!
