Super Soft Banana Cinnamon Crumb Muffins

These muffins are incredibly soft and moist, and they're topped off with a delicious maple glaze.

Ingredients

  • Cinnamon Crumb:
  • 8 tablespoons unsalted butter, melted
  • 1 1/4 cups all-purpose flour
  • 3/4 cup light brown sugar
  • 2 tablespoons cinnamon
  • Banana Muffin:
  • 12 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 eggs, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 3 ripe bananas, mashed
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Maple Glaze:
  • 1/2 cup powdered sugar
  • 2 tablespoons pure maple syrup
  • 2 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F.
  2. Grease 10 cups of a 12-cup muffin pan. This recipe yields 10 large muffins.
  3. Let's make the crumb: In a medium bowl, combine flour, brown sugar, cinnamon, and melted butter. Mix with a fork until crumbly. Set aside.
  4. Now for the muffin batter: In another bowl, beat melted butter and sugars with a hand mixer for about two minutes until well combined. Add eggs and vanilla, and beat for an additional two minutes. Mix in mashed bananas for about a minute. Slowly add dry ingredients until fully combined.
  5. Use a small ice cream scooper to pour the first layer of batter into each muffin cup. Sprinkle a layer of crumb over the batter, then add another layer of batter, and finally top with more crumb.
  6. Bake for 25-27 minutes until golden brown.
  7. While the muffins are baking, let's make the glaze: In a small bowl, combine powdered sugar, maple syrup, and heavy cream. Stir until smooth.
  8. Once the muffins are done, let them cool in the pan for five minutes, then transfer them to a cooling rack. Allow them to cool for an additional five minutes, then pipe on the glaze and enjoy your delicious muffins!
