Super Soft Banana Cinnamon Crumb Muffins
These muffins are incredibly soft and moist, and they're topped off with a delicious maple glaze.
Ingredients
- Cinnamon Crumb:
- 8 tablespoons unsalted butter, melted
- 1 1/4 cups all-purpose flour
- 3/4 cup light brown sugar
- 2 tablespoons cinnamon
- Banana Muffin:
- 12 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
- 1/2 cup light brown sugar
- 2 eggs, at room temperature
- 1 1/2 teaspoons vanilla extract
- 3 ripe bananas, mashed
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- Maple Glaze:
- 1/2 cup powdered sugar
- 2 tablespoons pure maple syrup
- 2 tablespoons heavy cream
Instructions
- Preheat your oven to 350°F.
- Grease 10 cups of a 12-cup muffin pan. This recipe yields 10 large muffins.
- Let's make the crumb: In a medium bowl, combine flour, brown sugar, cinnamon, and melted butter. Mix with a fork until crumbly. Set aside.
- Now for the muffin batter: In another bowl, beat melted butter and sugars with a hand mixer for about two minutes until well combined. Add eggs and vanilla, and beat for an additional two minutes. Mix in mashed bananas for about a minute. Slowly add dry ingredients until fully combined.
- Use a small ice cream scooper to pour the first layer of batter into each muffin cup. Sprinkle a layer of crumb over the batter, then add another layer of batter, and finally top with more crumb.
- Bake for 25-27 minutes until golden brown.
- While the muffins are baking, let's make the glaze: In a small bowl, combine powdered sugar, maple syrup, and heavy cream. Stir until smooth.
- Once the muffins are done, let them cool in the pan for five minutes, then transfer them to a cooling rack. Allow them to cool for an additional five minutes, then pipe on the glaze and enjoy your delicious muffins!
