Raspberry Cheese Crumble Buns

Ingredients

  • 1/2 block of yeast (0.55 oz)
  • 1 cup warm milk
  • 4 cups all-purpose flour
  • 3 tablespoons sugar
  • 4 tablespoons oil
  • 1 egg
  • Additionally:
  • 1 beaten egg for brushing
  • The Best Crumble Topping:
  • 1/4 cup butter
  • 3/4 cup all-purpose flour
  • 1/4 cup sugar
  • Cheese Filling:
  • 7 oz cottage cheese
  • 1/2 oz softened butter
  • 3 tablespoons sugar
  • 1 egg yolk (blend all until smooth)
  • Additionally:
  • A handful of raspberries

Instructions

  1. Let's start with the yeast mixture: Mix yeast with sugar and milk, add a tablespoon of flour, cover, and wait until it froths up – you'll see a fluffy top!
  2. Combine flour with egg, oil, and the risen yeast mixture.
  3. Knead the dough, adding 2 tablespoons of flour if it's too sticky.
  4. Leave it covered until it doubles in size.
  5. Divide the risen dough into about 12 balls.
  6. Make a well in each bun (use the bottom of a glass) and fill with cheese mixture and raspberries.
  7. Brush with beaten egg, sprinkle with crumble, and place on a baking sheet.
  8. Bake at 350°F for approximately 20 minutes.
  9. Once cooled, drizzle with icing (mine is powdered sugar and milk).
