Pudding Pretzels

Ingredients

  • Dough:
  • 3 1/2 cups all-purpose flour
  • 3/4 cup lukewarm milk
  • 0.7 oz fresh yeast
  • 1/4 cup sugar
  • 1/4 cup (1/2 stick) softened butter
  • 1 egg
  • A pinch of salt
  • 1 packet vanilla sugar (preferably Bourbon)
  • 1 tsp lemon zest
  • Pudding:
  • 1 packet vanilla pudding mix
  • 1 2/3 cups milk
  • 1/3 cup sugar
  • Additionally:
  • 1 egg yolk + 1 tbsp milk for brushing
  • Some apricot jam
  • 4 tbsp powdered sugar + 1 tbsp lemon juice

Instructions

    Dough: Mix together milk, fresh yeast, and sugar. Add all other dough ingredients to a large bowl. Pour in the milk-yeast mixture and knead until a smooth dough forms. Use only 3 1/2 cups of flour; the dough will be very soft. Cover the dough and let it rise in a warm place for 1 hour.
    Prepare the pudding according to the package instructions but only use 1 2/3 cups of milk and slightly more sugar (1/3 cup).
    Transfer the pudding to a large bowl, cover with plastic wrap, and let it cool.
    Shape the dough into 9-10 pretzels. Cover the pretzels and let them rest for 20 minutes. Then, brush the pretzels with an egg yolk.
    Fill the cooled pudding into the pretzel molds. Bake the pudding pretzels in a preheated oven at 350°F (180°C) for about 15-25 minutes until golden brown. Brush the warm pudding pretzels with apricot jam.
    Mix powdered sugar with lemon juice to make a glaze and drizzle it over the cooled pudding pretzels. Enjoy your delicious Pudding Pretzels!
