Ingredients

  • 1/2 cup (125g) butter
  • 1 cup (250g) sugar
  • 1 tablespoon honey
  • 2 tablespoons plum jam
  • 3 tablespoons gingerbread spice mix
  • 1 teaspoon cinnamon
  • 2 tablespoons cocoa powder
  • 2 teaspoons baking soda
  • 1 cup (250 ml) milk
  • 3 eggs
  • 2 1/2 cups (300g) flour
  • Plum jam for filling
  • Glaze: 7 oz (200g) dark chocolate, 1/2 cup (125 ml) 30% cream

Instructions

  1. In a saucepan, melt the butter. Add sugar, honey, 2 tablespoons of plum jam, gingerbread spice mix, cinnamon, and cocoa powder. Heat until the butter melts and the sugar dissolves. Remove from heat.
  2. In a bowl, mix milk and eggs. Add the gingerbread mixture. Stir quickly and vigorously. Gradually add flour while stirring.
  3. Pour the batter into a baking pan lined with parchment paper. Bake in a preheated oven at 350°F (180°C) for about 45-50 minutes or until a toothpick comes out clean. Remove from the oven and let it cool.
  4. Cut the gingerbread in half and spread plum jam over one half. Finally, drizzle with chocolate glaze (heat the cream, pour over chopped chocolate, mix until smooth).
