Overnight No-Knead Rustic Bread

Ingredients

  • 4 1/4 cups all-purpose flour (I used 4 cups of all-purpose flour and 1 cup of whole wheat flour)
  • 1 7/8 cups warm water
  • 1 1/2 teaspoons salt
  • 2 teaspoons active dry yeast

Instructions

  1. Mix all the ingredients just until combined.
  2. Cover the bowl and let it rest for about 1 hour at room temperature.
  3. Then place the bowl in the refrigerator and leave it overnight.
  4. Take out the risen dough onto a floured surface.
  5. Shape it into a loaf, dusting with flour, and cover it with a cloth while preheating the oven with a baking dish inside.
  6. IMPORTANT: Shape the loaf gently, dusting with flour just enough to prevent sticking.
  7. Preheat the oven to 240°C (464°F) with the baking dish inside.
  8. Once heated, carefully transfer the loaf into the hot baking dish.
  9. Score the bread on top.
  10. Cover with a lid and bake for 30 minutes at 240°C (464°F).
  11. After this time, remove the lid and bake for another 12-15 minutes.
