Guava Chunk White Chocolate Cookies

If you’re a guava lover, these will be your new favorite cookies! 😋

Ingredients (all at room temperature):

  • 2 1/2 cups of all-purpose flour (about 320g)
  • 1 tablespoon of cornstarch (about 10g)
  • 1 teaspoon of baking soda (about 5g)
  • 1/2 teaspoon of salt (about 2g)
  • 1 cup of butter (about 200g)
  • 3/4 cup of brown sugar (about 165g)
  • 1/2 cup of granulated sugar (about 100g)
  • 1 medium egg
  • 1 egg yolk
  • 1 teaspoon of vanilla extract (about 5g)
  • 3.5 ounces of white chocolate (about 100g)
  • 5.3 ounces of cubed guava paste (about 150g)

Instructions:

  1. In a bowl, mix the flour, baking soda, cornstarch, and salt. Set aside.
  2. In another bowl, cream together the butter, granulated sugar, and brown sugar until fluffy, about 3 minutes. Add the vanilla, egg, and egg yolk, and mix well.
  3. Gradually add the dry ingredients to the wet ingredients in two parts, stirring with a spatula until no flour clumps remain. Avoid overmixing. Fold in the white chocolate and cubed guava paste.
  4. Form the cookie dough into balls, place them on a baking sheet lined with parchment paper, and freeze for 6 hours. Chilling is necessary for extra thickness.
  5. Preheat the oven to 350°F (180°C).
  6. Bake for 13 minutes. The cookies will be very soft when they come out of the oven, so let them cool on the baking sheet before transferring them to a wire rack to cool completely. Then, enjoy!
