Gingerbread Cookies

Ingredients

  • For the Cookie Dough:
  • 3 1/2 cups of all-purpose flour (425g)
  • 1 1/2 teaspoons of ground ginger
  • 1 1/2 teaspoons of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 6 tablespoons of softened butter (90g)
  • 1/2 cup of packed brown sugar (100g)
  • 1/4 cup of granulated sugar (50g)
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of milk (cow's milk or plant-based)
  • 1/2 cup of molasses (142g)
  • For the Icing:
  • 1 1/2 cups of powdered sugar
  • 5 tablespoons of water
  • 2 teaspoons of corn syrup

Instructions

  1. In a large bowl, whisk together the flour, ground ginger, ground cinnamon, and ground nutmeg until well combined.
  2. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the vanilla extract, milk, and molasses to the butter mixture, and mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If the dough is too dry, you can add a little more milk.
  5. Divide the dough into two equal portions, flatten each portion into a disk, wrap them in plastic wrap, and refrigerate for at least 1 hour or until firm.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out the chilled dough to about 1/4 inch thickness.
  8. Use cookie cutters to cut out shapes from the dough and place them on the prepared baking sheets.
  9. Bake the cookies for 8-10 minutes, or until set and lightly golden brown around the edges.
  10. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  11. Once the cookies are completely cooled, you can prepare the icing. In a small bowl, whisk together the powdered sugar, water, and corn syrup until smooth.
  12. Drizzle or spread the icing over the cooled cookies as desired.
  13. Let the icing set before serving or storing the cookies in an airtight container.
